The Winemaker

Known affectionately as "The Bubble Man," Manel Aviñó is regarded as Catalonia's frontman when it comes to sparkling wines. Today he runs the estate alongside his daughter Núria.

The farmhouse of Can Ramon dates to the 14th century, historically tied to wine commerce with Southern France. In 2001, Manel and his brother Joan began the ambitious project of recovering the estate's former brilliance.

Set in the Garraf Mountains along the Mediterranean Sea, the property rests on calcareous soils rich with marine fossils. Sheep graze the vineyard, bees aid pollination, and Ringo the horse handles plowing. The phases of the moon guide every step.

Elegance, purity, and crisp minerality

Manel stopped using sulfites when his wife was diagnosed with illness. What began as a personal choice became a defining philosophy. Ambient yeast harvested from wine tanks and honey from their own bees spark the second fermentation in bottle. No additions, no enzymes — just elegance.
